Ingredients

 3 Potatoes
 12 Tofu Balls
 200g Minced Beef
 2 tsp Salt
 2 tsp Pepper
 1 tbsp Fried Onions
 1 stalk Chinese Celery
 3 Eggs
 1 tsp Corn Flour

Instructions

  1. Put the potatoes in a pot of boiling water until they are soft (a fork should be able to poke into it easily), then remove them from the pot and allow them to cool.
  2. Gently remove the skin from the potatoes then mash them with a fork and set them aside.
  3. Cut across the top of the tofu balls and remove the white part inside the tofu and set aside.
  4. Heat a tablespoon of oil in a frying pan, then fry the minced meat, adding a little salt and pepper, then stir until cooked through.
  5. In the bowl of mashed potatoes add in the fried minced meat, onions, chillies, white part of the tofu, Chinese celery, and salt - combine it all together and then stuff the tofu ball skins.
  6. Crack the eggs into a small bowl and whisk them, then add in the corn flour & stir.
  7. Put each stuffed tofu into the egg mix and coat them well, then fry them in a wok with heated oil. Remove them when lightly browned.
