Soto Ayam
This is a great recipe that needs a little time to prepare but always a hit with guests. Keep that soup hot when serving, and add your own condiments if you wish to make it your own.

Ingredients
Pound these ingredients : | |
1 inch Ginger | |
3 Shallots | |
4 cloves of Garlic | |
1 tbsp White pepper | |
2 tbsp Fennel Seeds | |
2 tbsp Cumin Seeds | |
2 tbsp Salt | |
Soto Soup: | |
5 tbsp Oil | |
2stalks ends Lemongrass (slightly bruised) | |
3 Star Anise | |
4 Cardamom | |
1 liter Chicken stock | |
½ Chicken | |
Condiments: | |
Nasi Impit | |
Boiled chicken (removed from the soup and shredded) | |
Beansprouts | |
Coriander leaves | |
Fried Onions | |
Boiled Eggs (*optional) | |
Chili sambal | |

Instructions
- Pound the ingredients listed in a pestle & mortar, set aside
- Heat the oil in a pan then add in the lemongrass, star anise and cardamom
- Then add the blended ingredients into the pan, fry until fragrant
- Add in the chicken stock until it boils.
- Then add in the chicken pieces and boil for about another 15mins
- To serve, place all the condiments into a bowl and pour in some Soto Soup.
