Soto Ayam

This is a great recipe that needs a little time to prepare but always a hit with guests. Keep that soup hot when serving, and add your own condiments if you wish to make it your own.

 Pound these ingredients :
1 inch Ginger
3 Shallots
4 cloves of Garlic
1 tbsp White pepper
2 tbsp Fennel Seeds
2 tbsp Cumin Seeds
2 tbsp Salt
 Soto Soup:
5 tbsp Oil
2stalks ends Lemongrass (slightly bruised)
3 Star Anise
4 Cardamom
1 liter Chicken stock
½ Chicken
 Nasi Impit
 Boiled chicken (removed from the soup and shredded)
 Coriander leaves
 Fried Onions
 Boiled Eggs (*optional)
 Chili sambal


  1. Pound the ingredients listed in a pestle & mortar, set aside
  2. Heat the oil in a pan then add in the lemongrass, star anise and cardamom
  3. Then add the blended ingredients into the pan, fry until fragrant
  4. Add in the chicken stock until it boils.
  5. Then add in the chicken pieces and boil for about another 15mins
  6. To serve, place all the condiments into a bowl and pour in some Soto Soup.
