Pucuk Paku Belacan

Pucuk Paku is a delicious wild fern. It’s highly nutritional and rich in antioxidants, with high fibre content. This curly vegetable makes a great and simple stir-fried dish but we love ours cooked with belacan!

 1 bunch Pucuk Paku
 2 Red small onions
 3 Garlic cloves
 1 Big red chilli
 3 Chilli padi
 1 tsp Belacan
 1 tbsp Oyster Sauce
 ½ tsp Salt
 2 tbsp cooking oil
 1 tbsp water


  1. Rinse one bunch (or ikat) of pucuk paku, and then cut off 2 inches from the stem.
  2. In a mortar place the onions, red chilli, chilli padi and garlic cloves, then pound them
  3. In a wok add cooking oil then put the sambal mix, from the mortar, oyster sauce and salt, then fry until fragrant.
  4. Add the pucuk paku, water and then fry for 3 minutes.
