Prawn Tandoori Skewers

Did you know that a tandoor is a cylindrical clay oven? The Tandoori marinade consists of yogurt and spices like coriander powder, chilli powder and garam masala. For today’s recipe, we’re switching up the traditional tandoori with prawns! They are one of the most healthy seafood options to include in your diet. High in protein and low in carbs, they are a source of good fats. They are rich in Omega fatty acids, minerals and are a great source of Vitamins A, D and E as well as B1, B2 and B3. Ingredients

 400 g XL Prawns (Shelled, deveined with tails on)
 1 tbsp Vegetable Oil
 5-6 Bamboo Skewers (soaked for 30 mins)
 3 tbsp Plain Yogurt
 3-4 cloves Garlic (minced)
 1 inch Ginger (grated)
 ½ tsp Garam Masala Powder
 ¼ tsp Turmeric Powder
 ¼ tsp Black Pepper Powder
 ½ tsp Chilli Powder
 2 tbsp Lime Juice
 ½ tsp Salt
 1 tbsp Vegetable Oil
 4 drops Red colouring (*Optional)
 1 stem Coriander Leaves
 1 Lime (cut to garnish)
 4 tbsp Greek Yogurt
 Fennel seeds
 Mint Leaves

Instructions

  1. Mix ingredients for the marinade, and add in the prawns and leave for at least 1 hr.
  2. Thread the prawns on pre-soaked bamboo skewers curled from the head to tail.
  3. Grill/BBQ method : Grill on medium heat for 4-5 minutes on each side, brush well with some oil occasionally.
  4. Prawns are cooked when they have turned from grey to pink, and they have charred slightly on the surface.
  5. Garnish with coriander leaves and some lime/lemon wedges. Serve with sauce of your choice. We mixed some plain yogurt with a sprinkle of fennel and mint leaves.
