Pandan Coconut Mug Cake

Ingredients

1 Tbsp Coconut Oil (melted)
2 Tbsp  Pandan Leaf Extract
2 Tbsp White Sugar
1 Egg
2 Tbsp Shredded Coconut (1 Tsp for topping)
1/4 Cu Self-Raising Flour*
1 Tbsp Kaya (for topping)

Instructions

  1. In a microwaveable mug, put in coconut oil, pandan leaf extract, coconut milk, sugar, and egg. Whisk together well.
  2. Add in the shredded coconut and self-raising flour and whisk again, until no lumps left.
  3. Microwave for 2-3 minutes (on high setting) until the cake has cooked and risen.

Serve immediately, with a teaspoon (or two) of kaya and a sprinkle of shredded coconut.

 

NB: If you don’t have self-raising flour, replace it with plain flour. Add 1½ tsp of baking powder & ¼ tsp salt to 1 cup of plain flour, mix them all very well together. Use ¼ cup of this flour mixture for the stated recipe instead of self-raising flour*
