Noodle Omelette
As things are getting more ‘normal’, do you still prefer to stay at home or are you already out and about?
Here’s a #sosimplesosedap recipe that may have been born during lockdown, but this comfort food is still one of our favourites. Why not whip it up for a quick lunch, or for those late nights! All you need is a packet of noodles, some eggs and you can leave the rest to your imagination….. but here’s our version to enjoy 🤤.

Ingredients
1 pack Maggi Noodles (Curry Flavour) | |
1 cup Water | |
1 pkt Seasoning | |
3 Eggs | |
½ tsp Salt | |
¼ tsp Black Pepper | |
1 Onion (small, chopped) | |
1 Tomato (medium, chopped) | |
1 Green Chilli Padi (sliced) | |
2 tbsp Oil | |
1 stalk Coriander (chopped) | |
1 Red Chilli (sliced) |
Instructions
- Break up the noodles into a pan then add the water and seasoning, then cook until the water has dried up, then remove from the heat and set aside.
- Put two eggs into a bowl and add salt, black pepper, onion, tomato, green chillies then whisk well.
- Heat up the oil in a pan, on medium heat pour in the egg mixture and cook until 50% cooked.
- Place the noodles evenly on the omelette, then sprinkle on the red chillies and coriander. Fold the omelette over into half and cook for another 1 minute on low heat.
NB: use lesser amount of water than stated on the noodle packet (130ml)
