Ingredients

 1 kg Mackerel (about 3 or 4 fish)
 5 Shallots
 2 Cloves of Garlic
 2 inch Turmeric
 1 inch Ginger
 4 Candlenut
 1 tsp Belacan
 3 Big Red Chilli
 ½ cup Water
 1 tsp Sugar
 Banana leaves
 Turmeric leaves

Instructions

  1. Make the chilli paste by adding these ingredients to a blender : shallots, garlic, turmeric, ginger, belacan, red chilli, water and sugar. Blend til well mixed and set aside.
  2. Wash and clean the fish, then make small shallow cuts on both sides of each fish.
  3. Cover the fish with the blended chilli paste on both sides, then place the fish onto a banana leaf, roll the leaf over and secure with toothpick if u need to.
  4. Place the covered fish on a grill pan and cook for 5 minutes on both sides.
