This Indian vegan side-dish is a staple if you ever want to create your own Banana Leaf meal at home. Our recipe guarantees light and crispy slices of bitter gourd, which we warn you can be quite addictive as a Sedap bite-sized snack too.

|3 tbsp Rice flour|
|1½ tsp Turmeric|
|2 tsp Garam Masala|
|3 tsp Curry Powder|
|3 tbsp Besan Flour (Gram Dhall)|
|2 (Large) Bitter Gourd|
|2 tsp Salt|
|4-5 cups Cooking Oil|
- Cut the bitter gourd in thin slices and put into a large mixing bowl
- Add the Dhall flour, rice flour, curry powder, turmeric powder, garam masala, salt and lemon juice and mix well
- Add the cooking oil to the wok and heat up, then slowly put the battered bitter gourd into the wok and fry until they are crispy.
- Remove from the wok and then drain on some kitchen paper before serving.
