Corn Fritters
These fritters are made by combining a batter of cheese, fresh corn, egg and flour creating a super crunchy & savoury appetiser, which is also great to serve as a snack for the family. Thanks to Danielle Peita Graham, and her cook book On The Table at Home. In her book she also shares how to make a delicious avocado salsa, but you’ll have to purchase it for all her other incredible recipes.

Ingredients
2 Corn Cobs | |
1 Egg (whisked) | |
¼ cup Cheddar Cheese | |
2 Spring Onions (chopped) | |
¼ cup Plain Flour | |
½ cup Corn Flour | |
½ tsp Salt | |
½ tsp Black Pepper | |
2 tbsp Oil | |
1 tbsp Salted Butter |
Instructions
- Stand the Corn cobs upright on a chopping board, using a sharp knife, slice off the kernels. Discard the cobs and put the corn kernels, egg, cheese, spring onion, plain flour, cornflour, salt and pepper in a large mixing bowl. Combine well and bring together as a batter.
- Heat the vegetable oil in a non-stick frying pan over medium heat. Add the butter and when it starts sizzling, add several tablespoons of the batter at a time, without overcrowding the pan. Cook for 2 minutes on each side, or until lightly browned and crispy. Transfer the cooked fritters to a plate lined with a paper towel to drain.
- Serve with an Avocado Salsa (as described in @onthetableathome) or a chilli sauce of your preference.
