Chicken Porridge

If you have left overs from that great Roast Chicken [https://www.youtube.com/watch?v=2QIYc7yLfWc] recipe, and you want a simple yet comforting meal which you can make in less than 20mins, this is it. Our Chicken Porridge made with left over cooked rice and chicken (it could be from fried, roasted, grilled…whichever you have in your fridge that is still good – please don’t waste food)!! Then you just need a few basic ingredients to make this simply delicious & healthy dish.

Ingredients

 1 cup cooked chicken
 2 cups cooked rice
 3 cups hot boiled water
 1 inch ginger
 ½ tsp white pepper
 2 tsp salt (or to taste)
 To garnish: Spring onion Fried onions Soya Sauce Sesame oil (optional)
 Other optional condiments - Salted Egg, Tofu, Pickles (or anything else you like)

Instructions

  1. Put the cooked rice in a pot (or rice cooked), and carefully add in boiled hot water.
  2. Put in all the other ingredients into the pot and boil for 15-20mins.
  3. Add a little more hot water if you feel it’s too thick for your liking.
  4. Serve in smaller bowls with onions, soya sauce and other condiments of your preference.
