 Large Prawns
 Cooking Oil
3 tbsp Butter (unsalted)
6 Chilli Padi (chopped)
3 spring Curry leaves
3 clove Garlic
½ tsp Salt
1 tsp Sugar
½ tsp Soya Sauce
1 tbsp Apple Juice
6 tbsp Grated Coconut (dry fried to golden brown first)


  1. Leave on prawn heads and shell (cut off eyes), cut down back and remove veins & pat dry.
  2. Heat oil and deep fry the prawns in batches.
  3. Melt the butter in a clean wok, add garlic, chilies, curry leaves and salt then fry for about 2 min until fragrant.
  4. Add in the prawns, sugar, soy sauce, apple juice and grated coconut - cook on high heat for about 1-2 mins. Stirring constantly. Remove from heat and serve.
