Ayam Masak Kicap
This dish of chicken cooked in soya sauce is always a real hit at the dinner table. It’s simply a matter of throwing it all into the wok and letting the wonderful flavours soak into moist chicken pieces. No need for Tupperware coz ‘konfem’ no left overs!!

Ingredients
6-8 pcs of Chicken | |
1 tsp Turmeric | |
½ tsp Salt | |
2 stalks Lemongrass | |
1 Cinnamon stick | |
4 Cardamom | |
4 Star Anise | |
5 Cloves | |
1 inch Ginger (sliced) | |
3 cloves Garlic (sliced) | |
1 big Onion (sliced) | |
1 large Potato (cut into wedges) | |
2 big Red Chillies (Use Chili Padi if you prefer spicy) | |
1 tbsp Light Soya Sauce (salted) | |
1 tbsp Dark Soya Sauce (salted) | |
1 tbsp Sweet Soya Sauce | |
½ cup Water | |
½ tsp Black Pepper | |
2 medium Tomatoes (quartered) |
Instructions
- Add Turmeric and Salt to the chicken and mix well
- Fry the chicken in a wok of heated oil, turning occasionally, then when ¾ cooked or lightly browned remove from the wok.
- In another wok and a little more oil on medium heat, add the sliced onion, and fry to golden
- Then add all the spices - cinnamon, cloves, star anise & cardamom, stir gently
- Then add the lemongrass, garlic & ginger slices and cook for another minute
- Add in the chicken and stir gently
- Add in the potato wedges and Chillies and keep stirring for 5 mins
- Now add in all the soya sauces (light, dark & sweet)
- Stir and then cover and leave to simmer for 10mins, stirring occasionally
- Add in the tomatoes and then add about 1⁄2 tsp pepper (or to taste)
